Creation to celebrate the earth and lands of Mexico.
The black colour and airy texture of the cocktail refers to the lava floor on which Mexico City is built.
The ingredients tell the story of agave, a plant used in two of the most famous Mexican alcohols: TEQUILA & MEZCAL.
I used roasted pineapple liqueur in this cocktail to refer to "Pulque", a Mexican drink made from the fermentation of the heart of the Agave plant. It tastes like the freshest pineapple juice.

1cl gave syrup
2cl Lime Juice
2cl Roasted Pineapple Liquor
5cl Mezcal
1 egg white mixed with vegetable coal powder
Hard & Dry Shake
